Man’s eating habits have changed considerably throughout human history.
However, contrary to what one may assume, the most significant changes have basically occurred in the course of the past two centuries, and more particularly since the mid 20th century. These changes have, on the whole, had a negative impact on human health.
The human body (like that of other animal species) has developed a specialized system of enzymes which allows us to take full advantage of the food that nature has put at our disposal. Those eating habits not suited to what the human body was designed for are incompatible with our metabolism and represent a potential threat to human health.
